Malcolm Allan: Lorne Reborn
Malcolm Allan produce 54% of all Scotland’s Lorne Sausage, with an annual production of over 20 million Lorne Sausages per year. The team reformulated the range to bring it in line with the 2024 PHE salt targets, and reduce the fat content. Yeast extract and pea protein were used to maintain the flavour profile and mouthfeel, and the product now contains 42% less salt, 55% less calories, and 75% less fat. This work helped to secure a new contract, with the expertise ready to apply to future projects and the team is ready to consider similar retailer requests.
