Healthier recipe formation and healthier ingredient alternatives: Cakes and biscuits


FDF Scotland is hosting free online training sessions looking at healthier recipe formation and healthier ingredient alternatives. This unique opportunity is part of our Reformulation for Health programme and is open to relevant Scottish food businesses.


Session 1: Cakes and Biscuits - Friday 30 October, 10am – 12.30pm

Session 2: Sweet and Savoury Pastry - Monday 2 November, 10am – 12pm 


The sessions will cover:


  • Current legislation and nutritional targets
  • Review of useful ingredients
  • Functional and sensory issues when recipes are altered
  • Input from ingredient suppliers
  • A Q&A session.


The training is being delivered by Queen Margaret University, Scottish Centre for Food Development and Innovation and is funded through the Scotland Food & Drink Opportunities fund.


Each business who attends will receive a work book based on the information covered in the session.


This is a great opportunity for delegates to ask the experts any questions you have or highlight any key challenges you are facing when considering making changes to your recipes for health.
